America is known for it's burgers so it may be completely unorthodox that I share a burger recipe from a non-American Celebrity Chef. I do so only because it is absolutely amazing! We all know how well Jamie Oliver can cook so below is my take on his Insanity Burger. I will paste the link to his traditional version underneath so you can follow that if you prefer. Here goes......this recipe serves 4 people (or 2 if you want a giant burger)
Ingredients:
1 pound organic, grass-fed ground beef
1 red onion
White wine vinegar
Gherkins
Brioche burger buns
American or Dijon mustard
Chipotle hot sauce (I like Siete brand)
Aged cheddar (or your burger preference)
Organic ketchup
Burger sauce:
Organic romaine or iceberg lettuce
2 heaped tablespoons organic, free-range mayo
1 heaped tablespoon organic ketchup
1 teaspoon Siete Chipotle sauce
1 teaspoon Worcestershire sauce
Method:
Make the burger sauce by mixing all above ingredients together.
Season beef with salt & pepper and make into patties. Drizzle over a little olive oil, cover and put in fridge.
Finely slice red onion, then dress in a bowl with a splash of white wine vinegar and a pinch of sea salt.
Slice gherkins and cheese and halve the buns.
Finely chop the lettuce and mix with the the burger sauce.
Cook your burgers on the grill. When the burgers are nearly ready brush each side with a little mustard and chipotle and cook for another minute or 2 on each side. Before removing from grill add cheese to the top of each pattie so it can start to melt while you toast your burger buns.
Put the burger together by putting burger sauce lettuce mix on the bottom followed by pattie/cheese, gherkin and pickled onion. You can add a little more ketchup and mustard to the top bun if you like more sauce.
For the non-meat eaters - I love this recipe with halibut instead. Note: I suggest drying off halibut with a paper towel then dust with flour and the seasoning you would like (blackened seasoning is a great option). if the halibut is too damp the burger bun with get super soggy.
